THE WALKING TACO TFS4-PITTSTON TOMATO FESTIVAL
--Par cooked Steak was held at 69 * F in an ice filled chest, rather than 41* F or below as required. The Person in Charge stated that the steak was removed from the walk-in freezer and placed on ice inside the cooler at 12:00 PM this day, for transport to the event. The steak was removed from the cooler, placed in smaller pans and put inside of the freezer for further cooling. The temperature of the steak was taken again at 4:15 pm while in the freezer. The temperature at that time was 50* F. The steak was voluntarily discarded and denatured on site. The Person in charge was educated on the proper methods of cooling foods prior to placing in units for cold holding.
--Thermometers for ensuring proper temperatures of food are not available or readily accessible in refrigeration, freezer units.
--Metal stem thermometer for ensuring proper temperatures of food is not available or readily accessible.
--The refrigeration unit is not maintaining a temperature of 41*F or below as required. The facility agreed not to use the refrigerator to store temperature control for safety foods in the refrigerator until it is repaired or replaced and holding a temperature of 41*F or below. The ambient temperature inside of the refrigerator was 53* F. Repeat temperature approx. 1 hour later was 50 *F.

--The end caps are missing on several of the lights through out the kitchen. The cover on one of two round lights just inside of the kitchen is missing.
--Working containers in prep area, used for storing sanitizer taken from bulk supplies, was not marked with the common name of the chemical. The bottle was labeled during this inspection.--All inside surfaces of the microwave oven, a food contact surface, was observed to have food residue and was not clean to sight and touch. The microwave was cleaned and sanitized during this inspection.
--Loose rubber door gaskets observed on the walk-in cooler. The stated that he has addressed this and is waiting to hear from his repairman if he can still get the gasket for the unit.

--Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration
--Observed a build up of black mold like residue on the interior of the ice machine. Machine was emptied and will be cleaned prior to use.

--Refrigerated ready to eat, time/temperature control for safety food prepared in the food facility and held for more than 24 hours, located in the refrigerator , is not being date marked. Owner datemarked on site for corrective action.

--Observed old food residue on the deli slicer. Slicer was cleaned.
--Observed a build up of food residue around the hinges and along the back area on the Bain Marie.
--Observed rusting shelves in the refrigeration unit in the kitchen area.
--Observed the refrigeration unit in the kitchen with an ambient temperature of 49*F and not 41*F or less as required. Unit will be serviced prior to storage of TCS foods.
--Observed deeply scored cutting boards not resurfaced or discarded as required.
--Multiple foods (soup, chicken, Beef, chicken, ham, sausages, sliced tomatoes, pasta) held between 45-50°F, in 2 refrigeration units, rather than 41°F or below as required. Foods were discarded.

--Observed a build up of black residue on the surface around the nozzles on the soda machine.
--Observed a build up of food residue on a shelf and bottom area in one hot hold unit.
--Observed clean food equipment being stored wet creating an area of slimy build up along the edges of food pans.
--Observed a build up of old food residue on the interior of one microwave.

--Floor under hot line equipment has a build up of grease and old food residue and in need of cleaning.
--Floor in dairy and meat walk-in cooler observed with pooling water and old food debris.
