THE AMISH PANTRY
467 Berwick Hazleton HWY NESCOPECK, PA 18635
--Food facility has an employee that has taken food safety training program (Tap Series); however, the certificate posted is a Certificate of Achievement and not a Food Managers Certificate. The facility was issued a Warning Letter in 2015 and 2017 with no response.
--Food facility is using an approved non-public water system, but does not have current laboratory testing results for water potability. The facility does not have available current water test results for Nitrate/ Nitrites. The owner will send a copy of the results via email to this inspector or Mail to the Region 3 office and include the name of the facility to the attention of this inspector.

--Black residual build up on the post can opener blade.
--Flour and sugar food ingredient storage containers, in the kitchen area, is not labeled with the common name of the food.

OUT OF COMPLIANCE
--*Deli meats was held at 57-58 °F, in the retail deli meat case, rather than 41°F or below as required. Picture attached. All meats were disposed.
--Observed in-use knives and /or cleavers stored between table edges or between tables, an area not easily cleanable & sanitized.
--Heavy ice build up on cases of frozen food in walk in freezer from malfunctioning freezer unit.
--Approximately 25 rodent pellets observed on pallets in storeroom area around sugar.
--Numerous flies observed in the meat and produce prep areas.
--The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
--Hose observed connected to water line with hose end laying on floor without benefit of a back flow device (vacuum breaker).
--Multiple cases of frozen food in walk in freezer is covered with ice.
--Large knive at produce prep table has a broken handle that is heavily taped not allowing for handle to easily cleaned.
--Observed deeply scored cutting board in produce prep area not resurfaced or discarded as required.
--Heavy dust build up on walk in produce cooler refrigeration fan guards.
--2 overhead doors located in the receiving area of the food facility has a gap and does not protect against the entry of insects, rodents, and other animals.
