Discussed proper hot holding temperatures and procedures. --Dairy and eggs held at 56°F, in the reach in refrigerator, rather than 41°F or below as required. Dairy was discarded. ALDI #97 481 PIERCE ST KINGSTON, PA 18704 NO VIOLATIONS BURGER KING #2955 130 S WYOMING AVE KINGSTON, PA 18704 --Floors inside of both the walk-in Cooler and walk-in Freezer with dust/dirt and food debris and in need of cleaning. The floors of both units were cleaned during this inspection. --The quaternary ammonia concentration in the sanitizing solution of the 3-bay warewash sink was 50 ppm, rather than 200-400 ppm as stated on the manufacturers use directions. The Person in Charge called and obtaiined a bag Quaternary Sanitizer solution delivered from another location. The sanitizer solution concentration is now 200 ppm. Prior to this inspection the facility had placed an order for sanitizer and delivery is expected later today. --Non-food contact surfaces, wall and corner post of the shelving unit located on the left just inside of the walk in cooler not cleaned at a frequency to preclude accumulation of a black/gray mold like residue. --Sanitizer bucket containing Quat. sanitizer solution that was less than 50 ppm, and not 200 to 400 ppm as required. Prior to this inspection the facility ordered sanitizer and delivery is expected today. During this inspection the facility obtained a bag of sanitizer from another facility. The sanitizer concentration in the bucket is now 200 ppm.

The food items were date marked during this inspection. --The food facility does not have a current certificate for the certified food employee posted in public view. The owner posted the current certificate during this inspection. THEO'S METRO BAR & RESTAURANT 596 Mercer AVE KINGSTON, PA 18704 --There is dried food residue on the floor surface of the reach in freezer unit at the end of the cook line. This same refrigeration unit has a greasy grime on the inside door surface and door shelves and in need of cleaning. The freezer was cleaned and sanitized during this inspection. --Observed a bag of Semolina flour stored directly on the floor in dry storage room, rather than 6 inches off of the floor as required. The flour was elevated during this inspection. --Two lamb roasts observed thawing pan in a cambro at room temperature on the drainboard of the 2 bay sink, which is not an approved thawing method. The Cambro pan containing the roasts were placed in the sink with cold water running over them during this inspection. --The post can opener blade , a food contact surface, was observed to have dried black/gray food residue and was not clean to sight and touch. The can opener blade was cleaned and sanitized during this inspection. --The edge of the ice deflector plate inside of the ice machine , a food contact surface, was observed to have a black mold like residue and was not clean to sight and touch. The deflector plate was cleaned and sanitized during this inspection. --The inside surface of one of two soda gun holsters at the front bar and the soda gun holster at the rear bar , a food contact surface, was observed to have food a tan residue and was not clean to sight and touch.
